After nearly 30 years of eating at El Toro Tambien in Fresno, CA, I still have no idea what goes into their tableside hot sauce, but I believe it to be the Nectar of the Gods! My Uncle TDY says it's so good, you can simply drink it. I love it with a minimum of one basket of chips, preferably two and before my meal is served. It's not the hottest in the world, but it does compliment anything, and I mean ANYTHING you pour it over.
