I've found a new favorite local butter, McClelland's Dairy here in Sonoma County. It has flavor not just of creaminess but of something more. That back of the palate flavor, like the difference between cheap olive oil and really good olive oil. A noticeable touch of salt is present. I've used it for my oatmeal in the morning and I've sauteed a couple pieces of chicken in it as well. I think the flavor came out more in the oatmeal; I use the butter at the end and fold a pat of butter into the finished product.
